Viresh Bulla – Upping Bangalore’s Chaat culture, one delicious dish at a time

As Indians our love affair with food only grows stronger every day. An Indian who isn’t a foodie is an anomaly. No surprise then that Viresh Bulla’s ‘Chaatimes’ (a chain of fast-food joints specialising in Indian chaats) has become quite the hit in Bangalore in a short period of time. Offering not only tasty dishes, but also assurance of quality and cleanliness, Chaatimes has all the flavour of street food with none of the hygiene risks.

While Viresh has harboured an entrepreneurial spirit since his college days (he ran a successful music store), he couldn’t take it further because of the lack of capital. Post engineering he started working, but the desire to start something of his own never died. Explaining how the idea to start Chaatimes came about, he says, “The entrepreneur in me kept calling but I was still unsure about what to do. Then one day I had some street food and fell sick. This made me realize there is no hygiene maintained. I did a lot of research and did not find anyone who offered quality
chaat with cleanliness and hygiene. This for me was the click and I thought to fill the gap, and that’s how Chaatimes was born.”

According to Viresh his travels in India and abroad (while working) have given him knowledge that has been implemented in running Chaatimes. “I was inspired by the West with respect to hygiene and cleanliness; and also on how a Quick Service Restaurant (QSR) should be established and run.” Understanding trends; applying the concepts of branding and positioning; and setting service standards have been a result of his extensive travelling.

Succeeding in an extremely competitive industry like QSR is quite a challenge. Yet Chaatimes has managed to convert every hurdle into a win, and is on a rapid growth streak. They already have 7 outlets in the city.

If not for this, Viresh would have taken up farming, as he is enthusiastic about it. Aren’t we glad he went the Chaatimes way, or else we’d be missing out on some seriously yummy treats.

Commenting on future plans, he says, “We at Chaatimes believe that we have an opportunity and idea to make it a
world class company. The immediate plan is to expand in Bangalore and to other cities within the state. In the coming years we want to be in all major district head quarters across India. We intend to make Chaatimes a world-class QSR that meets international standards and serves the best ‘chaat’.”

To others wanting to pursue the entrepreneurial path Viresh advises, “Never give up. This is a journey less travelled and you should be ready for the initial bumpy ride.” Patience and the right attitude he affirms are key to achieving success.

It was 14 years before Viresh could realise his dream of starting something of his own. But he didn’t waver and his patience paid off. Not everyone is up to the task of waiting it out, most give up along the way. Bold in his patience and perseverance, Viresh Bulla is an inspiration to us.
